A field blend of Nerello Mascalese, Nerello Cappuccio and Alicante (Grenache), as well as some white varieties, named for the traditional Etnean wine cellar with stone troughs for crushing grapes by foot – the old (and now technically illegal) style in which this wine was made. Vinified in stainless steel, old oak casks and Georgian amphorae. Tart dark cherry, wild strawberry, tomato leaf and green olive notes dominate – it's classic Etna but lighter, juicier and more energetic than most of the wines from the mountain. Serve with a light chill.
