Luciano Saetti's 'RossoViola' is drawn entirely from 50-year-old vines of Lambrusco Salamino di Santa Croce. Secondary fermentation (in bottle, not tank) is kicked off by a little sweet must from the same vintage and each and every bottle is riddled and disgorged by hand before hitting the market. Bone-dry, earthy, at once casual and complex, the RossoViola is savory and floral with a nose redolent of brambly red berries, dried violets, sweet spice, and a slight meaty tone. More frothy than overtly sparkling, the velvety texture is cut by bright acidity with a slight tannic bite.
