Currently the only monovarietal bottling of Ottonese in Lazio (a native varietal often blended by other local producers), biodynamically grown to boot. After spontaneous fermentation, it macerates on skins for 4 days (refined from the version Marco’s grandfather made; every family in the area had their own recipe for ‘Ritornato,’ but it was always white wine and always skin contact.) Aged in concrete tank, bottled unfined and unfiltered. A subtle, shimmering golden in the glass (‘orange’-esque at most), with plenty of citrus and tropical-leaning yellow fruits on the nose, in particular peach, yellow melon, and dried pineapple. Mineral-driven and lean, the few days on skins lending just a slight tannic bite, it finishes crisp and dry, with a pleasant bitter-orange-rind-and-almond parting note. 3500 bottles produced.
