Named for the patron saint of wine and inspired by Gianluca’s trip to the Boulard cellar in Champagne, following the notion that Sorbara and Pinot Meunier just might be related. Offers lifted notes of all kinds of raspberries — tartly underripe, freshly jammed, rolled in brown sugar — alongside cassis, licorice, and plenty of the wild, aromatic herbs which seem to pop up in all of Gianluca’s wines. Savory and elegant, serious but joyful, with just a bit of color from the light red skins, its combination of saline minerality and bright, juicy, driving acidity is carried off with absolute finesse.
