100% Ruché, ‘Ruschena’ is Tavijn's only wine from fruit sourced from neighbors, a family by the name of Ruschena. These vines are over 70 years old in a small plot on particularly calcareous soils, farmed organically and harvested by hand (just as Nadia would in her own vineyards). The grapes are destemmed, with berries kept whole and gently pressed without breaking the skins, just enough to kick off native-yeast fermentation in vat. Fermentations go long in this cold cellar, as do macerations, which are up to 2 months, with the wine aging for a year in steel tank before bottling without filtration or sulfur additions. As with all truly great Ruché, the Ruschena dazzles with heady, in-your-face aromatics of blackcurrant, pink rose, pink grapefruit rind, and exotic eastern spice. Spry and crunchy, the Ruschena’s chill-friendly frame is laced with spades of tight, red berry fruit and plenty of citrus riddled snap and crackle. Bring the Peking Duck!
