Giuseppe’s grandfather Don Pippinu passed away in 2005, and much of what Giuseppe and Valeria do is in honor of his life’s work, directly influenced by nonno's methods both in the vineyards and the cellar. The 'Don Pippinu' Rosso is an homage to his mentorship. The grapes for this bottling, 85% Nerello Mascalese and 15% Nerello Cappuccio, are specially selected from very deep, pumice-rich volcanic soils, less rocky than their other vineyards, and are taken from 80 year old vines. This lends the wine more structure in the glass and better ageability in the cellar. Grapes are crushed by foot, fermented by native yeasts and co-fermented. After 1 2 week maceration, elevage continues in stainless steel for 12 months before bottling, with no fining nor filtration and no sulfur added. An Etna Rosso that truly holds its own with many of the greats, its savory, mineral character is underscored by red cherry and herbaceous tones. This is an Etna classic not to be missed!
