Single-vineyard, organically farmed Fiano, ‘Exultet' takes full advantage of the mineral-richness dichotomy and great aromatic range of Avellino’s hallmark grape. Aged for 10 months in steel tanks and barriques, Luigi’s meticulous use of the barrel recalls the great whites of Burgundy, where he earned his Ph.D. Exultet's vibrant and complex bouquet just won’t quit, as white peach and apricot give way to lime blossom and acacia, fresh sage, thyme, and hazelnut. Well-structured and on the fuller side of medium-bodied, intense without being heavy or cloying, the wine is energetic on the palate and displays its deep, vivid varietal and volcanic terroir character with a saline, smoky minerality and long, savory finish.
