Comprised entirely of Procanico that sees just under a month on skins maceration in anfora before gentle pressing, followed by aging also in anfora for 5 months, then another 6 months in steel (with some still on skins). A wine that ranges widely, in a good way – intensely aromatic recalling tropical fruit, yellow flowers, sage, and mineral notes, but ultimately decidedly gastronomic and savory, with the local Trebbiano clone giving back all the tuffaceous-soil gifts of Lake Bolsena's volcanic origins. Only 500 bottle produced.
