90% Carricante and 10% Catarratto from various estate vineyards in Contrada Santo Spirito (Passopisciaro). Each plot is fermented separately with native yeasts in stainless steel. A selection of the resulting batches is aged on the fine lees for a 10 months in stainless steel, followed by 8 months of further aging in the bottle. The nose is cool, fresh and subtle, with aromas of lemon, lime, white flowers and yellow apple, along with briny notes of a sea breeze and crushed oyster shells. The palate comes alive with dense fruit flavors of lemon candy, white peach, pear and cantaloupe, before a finish that's bouncing with acid and even more salt.
