A salty, golden, yeasty dream to take you on the Italian vacation you probably had to cancel, Sussana’s ‘Flavus’ bottling is one of three different interpretations of the local Pignoletto grape to emerge from her cellars, and offers a perfectly rustic and carefree introduction to this uniquely Bolognese speciality. A lightly macerated and non-bubbly take on Pignoletto (we’ve featured her frizzante ‘Vines Sum’ here before) the Flavus sees a few brief days macerating on skins before aging in tank for a few months. A truly joyful farmhouse quaffer, the wine’s mid-weight frame carries elements of acorn, lemon/lime cordial, sour cream, flint and lanolin - not to mention herbal wafts of fennel and sage. This is a bottle purpose built for casual consumption, and doubles as a great drop to convert your wary, commercial-supermarket-plonk-drinking buddies to the true ways of lo-fi wine.
