Named for the rocky rise that breaks the otherwise flat landscape of the Cuturi estate, ‘Monte Diavoli’ is the winery's flagship expression of Primitivo di Manduria. The 100% organically farmed Primitivo is hand-harvested from clay-limestone soils, fermented with a month-long maceration in stainless steel, then aged for two years in large 10-hectoliter French oak casks. The extended élevage builds complexity while preserving the vineyard's freshness and sense of place, resulting in a Primitivo that favors elegance over sheer power. The wine opens with concentrated aromas of black cherry, plum, and blackberry layered with tobacco leaf, clove, and sweet baking spice. On the palate it is full-bodied but remarkably composed, balancing its generous fruit with lively acidity and supple, polished tannins. Notes of cocoa nib, vanilla, and Mediterranean herbs emerge as the wine opens, adding depth without obscuring the vibrant core of fruit.
