100% Cesanese di Piglio that, like all of Mario’s wines, undergoes spontaneous fermentation with native yeast, is bottled unfined, unfiltered, and with no added sulfites. A 21st-century take on the Classical varietal, one that has defined Lazio winemaking but too often ends up way too hot and heavy, or just plain boring. Ruby-red, the Monocromo Rosso is medium-bodied but so refreshing, bright and lively while respecting its own earth-driven spirit. Abundantly aromatic, with a nose full of red cherries and berries that gives way to black cherry, black olive, rosemary, and a properly savory palate. Well-structured but easy-going, and so juicy it might make your mouth water just looking at it. Fresh, funky, and definitely food-friendly.
