From the chalkiest parcel of Lassaigne’s vineyard in Montgueux, Le Cotet delivers on that minerality in its seashell-like notes and salt-air acidity. It’s a powerful chardonnay Champagne, the chalkiness mellowed with flavors of fresh almonds, scents of dried flowers and gingerbread spice. Like all of Lassaigne’s wines, it’s made without added yeast and with only a slight addition of sulfur at the press (none after).
