Dejan's Ribolla Gialla sees 3 weeks of skin contact and 3 years in Slavonian oak for aging; as with all his wines, fermentation is only with indigenous yeasts, there is no temperature control nor fining or filtering, and very little SO2 added. A elegant bouquet of orchard fruit salad, preserved lemon, tangy quince, white flowers, and a bit of classic Ribolla nutiness drives an energetic palate that packs a hint of sea spray, tannin grip, and mouthwatering acidity.
