Sourced from a newly planted plot of 5-6 year old Fiano vines that sit adjacent to Monte Mattina, the Sancho still sees two full months of maceration on skins. The Sancho shows a leaner, more savory and spice-driven side to Guido's Fiano bottlings. Bright and mineral-flecked, its subtle tannins belie notes of orange peel, apples, aniseed, cream, steel and a saline touch.
