The black sheep of Pinot Grigio! ‘Sivi’ consists entirely of Pinot Grigio, and while its label might bear the word ‘bianco’ this is in fact a textural and luscious ramato take on the often beige-feeling varietal, with 3 days of skin maceration pushing the wine’s hue to something in the realms of a translucent magenta. Reminiscent of cloudy watermelon juice in the glass (and somewhat on the nose too), the Sivi is lush with wild strawberry and red plum skin, punctuated by a citrus-dominated aromatic lift that elevates things to a stratospheric level.
