'Les Fontaines' is an assemblage of Pinot Noir, 10% of which is vinified as red and the rest as a Blanc de Noirs; the grapes used to produce the red wine are harvested around two weeks later providing a higher level of maturity and richness to the blend. Naturally fermented with wild yeasts, in barrels and in stainless steel vats, as with La Source and Terres Mêlées, this is a fully sans-soufre wine. Beautifully perfumed, mandarin peel and candied red fruits combine with ripe blood orange and licorice as whiffs of soil and earth lead into powerful Pinot territory. Juicy, mouth-filling forest fruits — ripe raspberries and sweet strawberries — infuse the palate with a plush intensity and lovely bite.
