The majority of De Fermo’s Bianco blend comes from 30-year old Pecorino and 90-year old Chardonnay vines. In both cases, the fruit is harvested earlier for its freshness, with the riper fruit from later harvest going into the more powerful monovarietal wines Don Carlino and Launegild. The balance of the blend is from an experimental half-hectare plot of mixed varieties, all natively fermented and aged in concrete tanks (you see what they did there!) Think apple, fresh almonds, notes of citrus, and wisp of fennel fronds with a salty twist to the palate. This is very savory, with just the right hint of grip, good texture, and a lengthy, fresh finish.
