FKA 'Sinfonia di Grillo' and as per Note di Bianco above, grapes come from vineyards around Santa Ninfa and Pietrarenosa – this is a selection of the highest-quality plots, and harvested a few days later for extra ripeness. After six days of maceration on their skins, the wine ages in old Sicilian chestnut botti for seven months before being bottled unfined and unfiltered with minimal SO2. Its stint in chestnut creates a more tannic take on the varietal, which makes this wine an excellent option to pair with food (a perfect match with couscous alla Trapanese!) Savory notes like basil and Mediterranean scrub mingle with rich, concentrated flavors of dehydrated yellow fruit, accentuated by a core of salty, mineral-driven acidity.
