It's more dense that your typical Pinot Grigio but that extra heft presents oodles of fuzzy orchard fruits perfect for your next rendezvous with a sharp cheese. 100% Pinot Grigio, hand harvested, foot tread and allowed to macerate on skins for 8 days. Fermentation with wild yeast from the vineyard and a full secondary fermentation was allowed to slowly complete with native bacteria throughout the winter and into spring. 6 months elevage in neutral puncheon, followed by 6 months in bottle.
