The Cavallotto family treats their Langhe Nebbiolo in very much the same manner as their Baroli, with the wine given an extended maceration period of anywhere from 18 to 38 days and then aging in large, Slavonian oak Botti for 15-18 months prior to bottling. Pulled from the younger vines, fruit comes from various parts of the greater Bricco Boschis. A supremely concentrated Nebbiolo, its heady bouquet is typical of the Bricco Boschis: red fruits and flowers, with spices, all open and intense. Cassis and cherry segue to black licorice, crushed stone, and wild herbs, and just a hint of citrus on the finish. Pure and energetic, with excellent structure and fine, silky tannins – ready to drink now but don’t underestimate its aptitude for aging.
