Cascina degli Ulivi Bellotti Semplicemente Bianco 2022

Cascina degli Ulivi Bellotti Semplicemente Bianco 2022

$28.00

Having crafted mesmerizing, soulful and multi-dimensional white wines for much of his career, Stefano felt driven to create a series of easy-going and more affordable quaffers, destined for the everynight dinner table; thus the 'Semplicemente' bottles were born. This is Ulivi's entry-level white, the crown cap indicative of its intended ‘glou-glou’ nature. 100% Cortese from Ulivi's estate vines in and around Gavi, the fruit was destemmed and spontaneously fermented in tank and barrel and then aged 6 months in a gigantic 11,000-liter oak cask, with no sulfur added at any point. This rustic and deliciously balanced white doles out waves of aromatic herbs, hay, ripe yellow orchard fruit, citrus pith, and a slate-y, mineral bass note. Leave your serious wine aficionado baggage at the door here, this is a truly gastronomic wine intended to fuel debate and discussion, not about the wine itself, but the world around… it’s what Stefano would have wanted.

Where to start with the late Stefano Bellotti and Cascina degli Ulivi? Largely responsible for the legitimization of biodynamic viticulture and the eschewing of modern oenology since the early 1980s, his vision has inspired an entire generation of younger vignaioli looking to walk in his footsteps. In a world determined to categorize and explain everything with science, Stefano preached holism. Even more impressive, he showed many of those that followed in his path how to buck the system, to voice dissent, and fight back against the commodification of nature and agriculture. Nestled amidst the bucolic hillsides of Piemonte’s Gavi region, Stefano played a vital role in the evolution of Italy's low-intervention wine landscape and the country's industry as a whole, and though he was sadly lost to a long battle with illness in the midst of the 2018 harvest, Stefano’s daughter Ilaria has ensured that the Bellotti imprint is still very much remained in the wines, and that the future of Cascina degli Ulivi is in good hands.
