This is Ulivi's entry-level white, the crown cap indicative of its intended ‘glou-glou’ nature. 100% Cortese from Ulivi's estate vines in and around Gavi, the fruit was destemmed and spontaneously fermented in tank and barrel and then aged 6 months in a gigantic 11,000-liter oak cask, with no sulfur added at any point. This rustic and deliciously balanced white doles out waves of aromatic herbs, hay, ripe yellow orchard fruit, citrus pith, and a slate-y, mineral bass note.
