The fruit is harvested in multiple passes beginning in mid-September, spontaneously fermented, then aged entirely in steel. Bottled unfined and unfiltered after three rackings, the wine rests for an additional year before release, allowing its vibrant personality to settle into remarkable harmony. Aromas of sour cherry, pomegranate, wild strawberry, and red plum are laced with cracked pepper, dried herbs, and an unmistakable thread of smoke and crushed volcanic stone.
