New label, who dis? From 70-year-old vines of Coda di Volpe planted 450 meters above sea level on clay soils; after a few days on skins, it's aged in a mixture of chestnut and mulberry wood barrels for one year. As always, ‘Paski’ has layers for days. Ultra-fresh, humming with grapefruit, blood orange, peach, and spice, and underpinned by notes of smoked apricot, thyme, honey, and an undeniable saline streak. Green tea and baked apple round out a dry, slightly grippy finish. Clean as a whistle, it impresses with fine tannins, zingy minerality, and an uber-refreshing herbaceous note. Don't drink it too cold, kick back, and unwind together.
