Rustically fizzy, pleasantly floral, and lip smackingly more-ish, Donati’s colfondo-style take on the Emilia-specific and highly aromatic subtype of Malvasia is killer Italian fizz at its stripped back finest. Treated to a brief period of skin maceration during its initial vinification and fermented in bottle without disgorgement, Donati’s dry Malvasia (he produces a slightly sweet version as well) exudes pineapple soda, pickled stem ginger, and powdery soft white flowers, carried on a wave of imperfectly perfect carbonation. And while this is not a wine that lacks for cerebral stimulation, it seems custom built to bring unadorned, no-strings-attached pleasure in the near term, and plenty of it!
