'Sottobanco' is a light skin contact wine made of 100% Procanico grapes. It spends three days on the skins and is vinified with native yeasts in small concrete basins before going to steel tanks for six months. With a tantalizingly golden hue, it has notes of Honeycrisp apple skin, white blossom, chamomile, and a subtle salinity that provides balance and lift. Pairs great with seafood and soft-ripened cheese.
