The 'Ancestrale' – a self-described 'Pet Nat pas dosé' – is a vivacios sparkling rosato made from equal parts Ciliegiolo and Sangiovese. The grapes are hand harvested early to maintain freshness and purity of fruit. Maceration lasts only a few hours which contributes to its delicate pink color; it is then aged in steel tanks before its second fermentation in bottle. With surprisingly delicate and subtle bubbles, it's full of juicy watermelon, black cherry, and strawberry Starburst vibes – clean but juicy, fruit forward but finishing dry. Serve well chilled for a dynamite complement to an elegant caprese crostini or a plate of fried calamari – or just a beach blanket.
