Mario’s 100% Cannonau, which presents dark ruby red in the glass, is exquisitely balanced and clean. Fermented with native yeast in stainless steel tanks, it sees a maceration period of about 14 days. The wine then ages in steel tanks for 8-12 months before being bottled without fining or filtration. It admirably retains all the punchiness of Cannonau – wild berries, herbs, and sea spray – carried on a much lither frame than is typical of the region. Smokey and earthy, it has notes of grilled stone fruit, leather, and oregano. Pair with grilled meats or spicy Asian dishes.
