Sauvignon Blanc does some pretty wonderful things when you factor in a little skin contact, and then some….This ultra rich wine is made from Sauvignon Blanc grapes, with 50% having botrytis, the 'Noble Rot' that concentrates sugars in the grape and adds a potent flavor to the wine. The grapes spend a month macerating on the skins while undergoing spontaneous fermentation; the wine then ages for 1 year in massive old oak barrels and is bottled unfined, unfiltered, with just a small dose of S02. Full-bodied, dry and aromatic, with notes of ginger, honey, underripe apricot, almond paste, and lemon, capped off by a lovely long finish.
