Carricante, Catarratto, Minnella Inzolia, Grecanico and Malvasia, all grown together in harmony and each year altering slightly in terms of their percentage in the final bottling. After harvest, the grapes spend 5 days macerating with the skins and are then aged in chestnut botti, developing an interesting patchwork of complexity that seems to allow each of the varieties ‘voices’ to shine through. Floral and fruity with a long, fresh sapidity in the wine that keeps it bright and never heavy; an increase in temperature and a little decant reveals a softer side - white nectarine, peach and delicate white flowers that dance around the nuttier edges.
