It’s official, Syrah has a second spiritual home, in the most unlikely places of Cortona , Southern Tuscany. 100% Syrah – biodynamically farmed – a portion of which is partially de-stemmed, while some are left whole and still others are lightly foot pressed. Fermentation occurs spontaneously in small concrete vats; the wine is then allowed to clarify naturally and is moved to various vessels for aging (mostly concrete and ceramic orbs, but a small portion does go into large oak casks). Throwing classic Syrah notes of wild dark plum, blackcurrant, and cassis, intense olive tapenade, and white pepper, Stefano's 2022 bottling has feathery tannins, more licorice, tarragon, and rosemary, and tertiary elements of violets and crushed stone. Smooth and seductive, with an undeniable Tuscan-terroir imprint.
