Foglia Tonda (meaning 'round leaf' in Italian) is another rare, ancient local Tuscan variety, dating back to the early Renaissance, saved and brought back to new life by the Morettis. From old vines lovingly cultivated according to biodynamic principles, it ferments spontaneously, then ages in wood and steel with no added SO2.
