An ultra-small production, sub-parcel selection from within the Palmento Casale, the vines here too consist of own-rooted Carricante from massale selections that Salvo has propagated over the past 2-3 decades. Unlike his other two white bottlings, the Etna Bianco Superiore first sees a year aging in neutral 500L botti before transferring to bottle for a further 12 months. What results is a wine that seemingly draws cues from some of the great premiere cru wines of Chablis, balancing fine mineral cut and piercing salinity, with spice, flesh and richness. Only 1200 bottles produced.
