Catarratto has always been the Pantesco favorite for everyday drinking – Francesco aims at emulating the elders’ taste characterized by crunchy texture and rusticity, while carefully expressing terroir. Traditionally planted against the terrasses’ walls, the 40-80 year old Catarratto vines for ‘Kaffefi’ comes from different contradas and parcels. Grapes are macerated overnight on the skins for extra structure, then fermented and aged in stainless steel on lees with light batonnage, adding to the balance of texture and tension. Lots going on in the glass and across the palate: dried orange peel, honey, lime zest, apricot, and light sherry, fresh, saline, and complex. Aromatic, textured, simply a stunning example of volcanic wine on skins.
Harvested around September 20th, the grapes were macerated overnight on the skins for extra structure. The wine was fermented and aged in stainless steel, bottling occurred without any additives.
