A gently sparkling wine from the classic local grape, Lambrusco di Sorbara. That’s all that’s classic about it however - as a short maceration on skins leads to a bone dry, rosato-style Sorbara, all tart strawberries, cherries, and herbs. Fermentations all happen in stainless steel before a secondary fermentation in bottle is fired with a little must from original harvest. Minimal sulfur added at bottling and no filtering or fining. There’s the potential you might wanna bathe in this stuff, and given the volumes in which people purchase this wine, we suspect some maybe do.
