One of our favorite bottles of farmhouse fizz whose arrival we await each spring! Made from the local Pignoletto variety in the col fondo style whereby the wine remains with the dead yeast (lees, or lieviti) in bottle, it's beautifully textured with preserved lemon, chamomile and mineral aromas supported by fine bubbles and gentle acidity. Bone dry and decidedly salty, with pear and apple skin, and barbecued pineapple. Fun fact: Pignoletto is thought to have once been described by Pliny the Elder as “not sweet enough to be good." While the grape might not have been for first-century tastes, it makes a solid case for its status as a darling of nu-wave Emilia and shines in Federico’s hands.
