'Mai Domi' means 'never tamed' in Italian and it’s a deeply expressive, passionate take on Cabernet Sauvignon, fermented on the skins for a month and aged in large old barrels for eighteen months. Bold, assertive and focused without ever being overpowering, it shows a deeply poetic streak: spiced black mulberries with olives confit, sweet capsicum and compote or red currants and lavender. Varietally true, it impresses with firm tannins and plenty of savory, sappy, and spicy notes amongst the black fruits. A wine so suited to the rustic cuisine of the surrounding hills.
