Having fostered a culture of polyculturalism and biodynamic farming practices since taking charge of his family’s vines in 1985, Stefano set about focusing his energies on the revival of ‘true’ Cortese wines, though he continued to foster a small parcel of pre-phylloxera Dolcetto vines that remained. You'd be forgiven in thinking while consuming the ‘Nibio’ that you were staring deep into a glass old Nebbiolo here; uncompromising and meditative, the Nibio is 100% Dolcetto - drawn from the same vines mentioned above. Delicate crushed purple florals, iron-tinged mineral pucker, tight and moody berry fruit, eucalypt and menthol drive the alluring aromatics. Though surprisingly lithe and linear in the mouth, the persistence and soulfulness of the Nibio really causes you to sit forward, take a moment, and relish in the opportunity to experience a wine that could be from nowhere else on earth.
