Produced for the first time in the 2019 vintage, 'Cotidie' is Giampiero’s homage to the way wine would have been produced in ancient times (hence the Latin name, meaning 'quotidian'): a co-ferment of differently colored grape varieties. As an IGT wine, it cannot include the varietal composition on the front label as Bea prefers, but it is comprises roughly equal parts Sagrantino della Pianura (which generates a softer wine with gentler tannins) and Trebbiano Spoletino, from a rented parcel on the plain between Montefalco and Spoleto. Grapes are destemmed entirely and co-fermented for 3-4 weeks with no temperature stabilization or pump-overs, and the resultant wine spent several months on its gross lees after racking. Occupying the interzone between dark rosato and light red, 'Cotidie' balances juiciness with Bea-typical spice and wildness, on a frame less ruggedly tannic than his pure-red offerings. Wickedly fresh with crisp red and blue wild berry fruits accelerated by sour citrus hints and vibrant acidity, do consider a slight chill for maximum effect.
