‘Mnimi’ is 100% Favorita (Vermentino in these parts), a grape that was once a favorite variety both of the producers and the consumers in Piemonte, and that Giuseppe and Kyriaki hope to champion the potential of again (the name means 'rememberance'.) Following a similar vinification process as ‘Nmesis,' with zero sulfur added, Mnimi is immediately the more savory of the two. Bright and green in the best way possible — awash in notes of green papaya, lime zest, pickled quince, green almond – and the florality of jasmine in fresh rain. In perfect balance on the palate, with acid-driven tension met by lightly bitter tannins, and a smooth, saline finish. Don't serve too cold.
