From the Le Coste acolytes at Sete, 'Alimento' is 100% old-vine Ottonese, macerated for five days on the skins and aged for 10 months in stainless steel. Zero SO2 added. The brief stint on skins keeps it relatively light in terms of spirit and tannins while still promising some oomph (Alimento is Italian for 'food' so this is no shrinking violet). It's golden amber in hue, refreshing but still earth-bound and savory, with a deft balance between ripe fruits and mineral grip. Full of citrus, spiced apricot, and herbal notes, and a tart and tangy palate.
