Sourced from just two hectares of estate vineyards in Pianella and Loreto Aprutino, ‘Aries’ is 100% Pecorino, harvested by hand in the cool of the early morning to preserve its vibrant aromatics. The fruit is gently pressed and fermented in stainless steel, with a small portion transferred to seasoned French tonneaux for three months before the final blend is assembled and rested in bottle; the restrained use of oak adds texture rather than flavor, giving the wine added depth while allowing Pecorino's naturally incisive character to remain front and center. The 2025 opens with an expressive bouquet of grapefruit zest, white peach, rosemary, thyme, and sage, underscored by hints of citrus blossom and crushed stone. A broad yet remarkably energetic palate combines ripe orchard fruit with a bright seam of acidity and a distinctly saline finish that speaks to Abruzzo's mountain-meets-sea landscape, while a subtle creaminess from the tonneaux rounds things out without diminishing the wine's freshness. Lingering notes of herbs, lemon pith, and almond add complexity on the finish. Textured, vibrant, and unmistakably Pecorino, this is a beautiful expression of one of central Italy's most iconic native white varieties, pairing richness with precision in equal measure.
