Vines have always existed on the San Martino farm, and Giuseppe instantly fell in love with the field blend produced from the single parcel in front of the house – so much so that he started selling it as his restaurant's house wine.  ‘Arcipressi’ hails from the Fabbrica’s original vineyard planted over clay and limestone; though less than a hectare, the seventy-year-old parcel is home to over a dozen native varieties with an ancient olive tree at its heart. This is a pure, old-school field blend: 15 local varieties, including Sangiovese, Ciliegiolo, Colorino, Canaiolo, Malvasia Nera, Aleatico, and more – white grapes, too – are handpicked and fermented together with native yeasts for a week on skins, before being pressed off to vat for a short rest. Bottled young, it is the kind of vibrant, perfumed red wine that you can drink with gusto, day and night. Aromas of blackberry and blueberry emerge on the initial pour, and with time evolve toward the more savory, with herbal hints of oregano and a soulful depth. This palate-pleaser has notes of black cherry, raspberry, plum, balsam, and a savory black olive-licorice streak that balances the bright fruit component. Beppe is known  as one of the most passionate and intuitive cooks out there, so it comes as little surprise that his wines make so much sense on the table, having a real affinity with Tuscany’s rich cuisine; it truly reaches its height accompanying a meal, as brisk acidity and subtle herbal tones complement any number of hearty, wintertime dishes.
