Comprised entirely of the exceedingly rare Trebbiano di Spagna, from a vineyard Max rescued from near-destruction. Unlike the other wines described heretofore, this is a still wine, aged in ceramic vessels after pressing. ‘Funambol’ comes from the name of the acrobat that walks the tightrope — what an accurate picture of the precision of this, rich with candied ginger, orange zest, and yellow peach aromatics. Max sees the rich, glycerin, mouth-filling element as a signature of Trebbiano di Spagna; we say its flickering freshness balances a technicolor, bee pollen, and sweet spice-laden palate and soft and enveloping texture.
