100% Sangiovese fashioned with an ancient approach to the process of carbonic maceration that dates back to the Etruscan times (CarboEtrusco… geddit??) This ancient Italian civilization was known to cover their fermentation 'tanks' (often clay pots or palmenti) with a wet, clay based paste, the rudimentary covering allowing the trapped CO2 during primary fermentation to protect the grape must and preserve pure and juicy fruit qualities. Fast forward to 2022 and the soulful, primal elements of this Sangiovese are very much there: wild red berries, sun-baked terracotta, crushed violets, macerated Morello cherries, a hint of peppery savor (ground black and red bell!), and that undeniable, racy-as-hell Sangiovese acidity. Surprisingly silky in the mouth at first but finished off by fine, powdery tannins – making for a wine best served with something off the grill, and a slight chill.
