Santuvario’s white offering is made from 100% Erbaluce, an often overlooked Piemontese grape that has been gaining more and more attention in recent years. Crisp and bright, with notes of apple and white flower, this singular bianco is grown in volcanic, fine gravel soil in one of the highest regions in all of Piemonte. The grapes are grown organically, harvested by hand, and fermented with native yeasts. It is followed by a 2 week maceration and is aged in stainless steel with minimal sulfur added. Pairs well with light seafood dishes or a bitter green salad.
