We weren't sure if these one-off bubbles would be back, but here they are, and in large, park-appropriate format! 50/50 Pignoletto and Malvasia di Candia Aromatica, the latter of which spends nearly three months on skins in Georgian qvevri before being blended together, with everything seeing secondary fermentation in bottle. Aged on its lees and never disgorged. The typically strong aromas of Malvasia, rife with jasmine and peach skin, met by the rustic, down-to-earth, more savory quality of Pignoletto. A deep orange hue, there’s citrus and spice in spades— think: marmalade with rosewater — buoyed by a pleasant gentle fizz and just a trace of tannic grip. Very little of this stuff left!
