100% Chardonnay from a single plot in Coteaux Champenois with a smidge of extended skin contact (a slooow pressing), lending an herbaceous undertone to the tart fruit and minerality, alongside a concentrated, savory edge: preserved lemon, rich & unctuous oxidative notes, caramelized aromatics. Eight months oak aging brings out a bit of baking spices and a more serious weight and texture still met by lasting acidity. Made with zero sulfur and via natural fermentation, the characteristics of this are unmistakably Chardonnay, just seen through a very distinct lens.
