Raphaël and Hannah Piconnet are Domaine de Bichery, leaders in a community of certified organic grower Champagne producers pushing a new level of terroir-driven quality. They farm six parcels in the sloping hills of the Aube, above the small town where Raphaël grew up, Neuville. 'La Source' is blend of Pinot Noir and Chardonnay harvested from three different plots. Expressive, intense, bright, with honey, baked apples, red berries, salted nuts, touch of caramel. Salty and round with a honey-cider finish. Native fermented and then aged in neutral Burgundy barrels & stainless steel for 9 months and then on its lees for 2.5 years. Full of tension and energy, this is as fresh as it gets!
