Likely the most 'grown up' wine to emerge from the project to date, the 'Skinphony' (how can you not love that name?) sees Viognier pressed onto skins for 5 days followed by 5 month in a variety of vessels - some ceramic barrel, some steel tank, some old barrique. The unabashed plushness of Viognier dances up front - peaches and cream, fresh white blossoms, vanilla pod - though a wonderful fruit-skin astringency and crystalline backbone of minerals and acid provide the necessary bones to carry such weight.
